Cookie dough choc chip bites

A nutritious and nourishing sweet treat to satisfy those cravings! 

Makes 10 


Ingredients:

  • ½ cup light tahini

  • 2 tbsp EVOO

  • 4 tbsp maple syrup

  • 1 tsp vanilla extract

  • ½ cup oat flour (gf if needed)

  • 3 tbsp almond flour (or ground almonds)

  • Pinch of sea salt

  • 3 tbsp dark chocolate chips

  • 100g dark chocolate (I used 85%)


Instructions:

  1. Mix together the tahini, EVOO, maple syrup and vanilla extract. Combine fully.

  2. Add the almond flour, oat flour, and salt.  Combine to make a cookie dough consistency and fold in the chocolate chips. You may need to add more oat flour if too runny.

  3. Take a tablespoon of dough each time, and roll into a ball – then place on a lined plate or tray. Freeze the balls for 10 minutes to set.  

  4. Melt the dark chocolate bar in a bowl and using two spoons to hold and roll each ball, dip each cookie ball into the melted chocolate to fully coat. Place the ball back on the parchment paper to set.

  5. Once set, store in a container in the fridge for up to 5 days or you can freeze for up to a month.
